Soak soya in hot water for 5/10 minutes.  Heat the pan add oil, chopped onion, chillies, curry leaves and fry until the onion is transparent.  Then add the Ginger Garlic paste and mix well. Immediately add the soaked soya, chilli powder, and curry powder and mix well and keep it for two minutes on low heat then add water just to cover the soya .  When the water is almost  absorbed add coconut milk mix well keep for five minutes remove from the cooker and add lime juice.

It is easy, tasty and quick to cook.  Soya curry can be used for rice, chapatti, rotti bread etc.

Soya is available in six different flavours.  The above curry is made out of regular flavour.  Curry flavour is also available for which the curry flavour is inside the packet.  As such in place of chillipowder and curry powder you can use the flavour packet that is inside and cook as above.   This is good  for Vegetarian / Vegan as it is very high in protein.

Other flavours are Chicken, Prawn, Cuttlefish and Mutton.

All of the ingredients required for this recipe can be purchased from the premier Indian store in Melbourne www.spicekingdom.com.au.
